Grandma used to make these every
Christmas, and we took up the tradition. But why wait for Christmas? These are easy enough
to be every day treats.
Be very careful not to overcook the mixture -- it will make the cookies like rocks.
We usually double the recipe, but it would be wise to stick to smaller batches
until you get a feel for it.

Servings: 24
| 1/4 c |
butter or margarine |
1 |
egg (beaten) |
| 2 c |
crispy rice cereal |
1 c |
sugar |
| 1 c |
chopped dates |
1 c |
shredded coconut |
1) Heat butter, egg, sugar, and dates in a heavy
kettle until the sugar dissolves
(about 3-5 minutes).
2) Stir in the cereal, and remove from heat.
3) When the mixture is just cool enough to handle, form about one inch balls, then
roll the balls in the coconut.
4) Allow the cookies to cool.
