This simple recipe is a big hit in our family - we rarely have leftovers.

Almost any apple will do, except Granny Smith alone (too tart - you'll need to add sugar) or Red Delicious (too soft and bland). We think a mixture of Golden Delicious and Macintosh is nice.

Servings: 6

3 sweet potatoes -- sliced 1 inch thick
4 apples -- quartered

Put sliced yams in a bowl with a small amount of water. Microwave on high for 10 minutes, or until yams are soft. Add quartered apples and microwave again, 3-4 minutes. Push through china cap colander to puree and remove peels and seeds.

note: (You can also peel the sweet potatoes, and peel and core the apples before cooking. Then you can use a potato masher instead of the china cap.)
